Nutty Fruit Bars

MAKES 20 BARS

These granola-like bars are great for an on-the-go breakfast, quick snack, or even dessert.

1¼ CUPS WHOLE RAW UNSALTED ALMONDS

¼ CUP ROASTED UNSALTED PISTACHIOS

½ CUP WHOLE UNSALTED WALNUTS

¾ CUP ALMOND MEAL

½ CUP UNSWEETENED COCONUT FLAKES

½ CUP DRIED UNSWEETENED CHERRIES, FINELY CHOPPED

½ CUP RAW HONEY

¼ CUP WALNUT OIL

1 EGG WHITE

1 TABLESPOON GROUND FLAXSEED

2 TEASPOONS PURE VANILLA EXTRACT

½ TEASPOON GROUND CINNAMON

1. Preheat the oven to 325°F.

2. Combine the almonds, pistachios, and walnuts in a food processor. Cover and pulse until they are finely chopped; then transfer the nuts to a large mixing bowl.

3. Add the remaining ingredients to the nuts and mix well.

4. Spread the mixture very firmly in an even layer in a foil-lined 9-by-9-inch baking pan, allowing some of the foil to line the sides.

5. Bake the mixture for 20 minutes or until it is a deep golden brown.

6. Use the foil edges to transfer the baked square to a wire rack. Allow it to cool completely.

7. Transfer the square to a cutting board. Use a long sharp knife to cut the square into 20 bars. Store the bars in the refrigerator for up to 2 weeks.
